Rainbow Pride Popsicles

Whether you’re part of the queer community or an ally showing support, this fruit-juice based rainbow popsicle recipe is a delicious and refreshing way to show your true colors during LGBTQ+ Pride month.

Ingredients

Serves 6

Red fruits: sliced Strawberries or Raspberries

Orange fruits: sliced Mangoes, Peaches, or Papayas

Yellow fruits: sliced Pineapples or Pears

Green fruits: sliced Kiwi or green Grapes

Blue/Purple fruits: sliced Concord Grapes or Blueberries

Pomegranate juice

Orange juice

Pineapple juice

Green juice blend

Blueberry or Concord Grape juice

Instructions

  1. Pour the Pomegranate or Cranberry juice evenly into 6 popsicle molds with a stick-holding lid. Press a few pieces of red fruit against the sides of each mold. Insert a lid into each mold. Freeze for 45 minutes to 1 hour, until slushy but not fully solid.
  2. Remove the sticks, then pour the Orange juice evenly over the red layer. Press orange fruit against the sides. Reinsert the sticks. Freeze for another 45 minutes to 1 hour.
  3. Repeat with the Pineapple juice and yellow fruit, then the green juice and green fruit, then the Blueberry or Grape juice and blue or purple fruit, removing and reinserting the sticks each time. Make sure to leave at least 1/8” headspace.
  4. After the final layer, leave the sticks in and freeze overnight or for at least 6 hours until completely solid.
  5. To unmold, run warm water over the outside of the mold for 10-15 seconds and gently pull the stick.
  6. Enjoy!
