Spiced Herbal Honey
This DIY brings together two of our favorite things – fall spices and the natural sweetness of honey. Mix it
up and incorporate it into your autumn recipes or enjoy it straight from the spoon. It makes a great herbal
gift, too!
Supplies
1 cup raw honey
3 Cinnamon sticks, broken into pieces
5 Star Anise pods
2.5 inch knob of fresh Ginger root, sliced
Optional: Peel of 1/4 to 1/2 of a fresh Orange
Equipment
Clean jar with a lid
Spoon
Double boiler
Strainer
Cheesecloth
Instructions
- Add a small amount of water to the bottom pan of a double boiler. Bring to a boil and then lower to a
simmer.
- Put on the double boiler top, add the honey and herbs, and stir.
- Let it simmer for 15-30 minutes.
- Strain out the herbs using a strainer and cheesecloth.
- Add the honey to a jar, let cool, and seal.
- Use in tea, spread on toast, or drizzle over oatmeal and enjoy!
Pro Tips:
- If you don't have a double boiler, use a tall saucepan and simmer a small amount of water in it. Add a
heat-safe bowl or measuring cup with the handle hooked on the pot so that it sits above the simmering
water.
- Alternatively, you can use a crock pot on the lowest setting with a heat-safe plate or lid (with
no plastic) between the crockpot surface and the honey jar. Add room temperature water to surround the jar about 3/4 of the way up, then turn on the crock pot to the "keep warm" or lowest setting. Allow to infuse overnight, or longer for a stronger tasting honey.
